– 1/3 cup coconut oil, melted
– 1/4 cup fresh lemon juice
– 1/2 cup maple syrup (or honey)
– 1 tsp vanilla extract
– Pinch of salt

For crust:
– 1 cup walnuts
– 10 medjool dates pitted

Instructions:

Crust:
1. In a food processor or blender blend together the walnuts and dates until they form a sticky dough.
2. Transfer into an eight-inch springform pan and press down firmly with your hands to create the base layer.
