Try This Delicious Vegan Tempeh Reuben Sandwich Recipe!

As veganism continues to rise in popularity, more and more people are looking for delicious plant-based options that can replace the traditional meat-based dishes they love. One such dish is the Reuben sandwich – traditionally made with corned beef or pastrami, sauerkraut, Swiss cheese, Thousand Island dressing, and rye bread. But fear not vegans! Tempeh is a fermented soybean product that originated in Indonesia but has now become popular worldwide as a vegetarian and vegan meat substitute due to its high protein content and nutty flavor. To make a vegan tempeh Reuben sandwich you will need:

– 8 ounces of tempeh
– 2 tablespoons of olive oil

– 1 teaspoon of smoked paprika
– Salt and pepper to taste
– Sliced rye bread (or any bread you prefer)

– Vegan Swiss cheese slices (optional)
– Thousand Island dressing

Instructions:

1. Preheat your oven to 400°F.
2. In a small bowl combine apple cider vinegar, tamari or soy sauce, minced garlic, smoked paprika, salt and pepper.
3. Cut the tempeh into thin slices or cubes.
4. Heat olive oil in a large skillet over medium-high heat.
5. Add the sliced/cubed tempeh to the hot skillet.
6. Pour half of your marinade mixture over the top of the tempeh while it’s cooking on one side until browned, about 3-4 minutes.
7. Flip the tempeh slices/cubes and pour the rest of your marinade over the top, cooking for an additional 2-3 minutes until browned.
8. Remove from heat once cooked through and set aside.
9. Place bread on a baking sheet and toast in the oven for a few minutes until lightly crispy.
10. Add vegan Swiss cheese to one side of each slice of bread (if using) and melt in the oven for a minute or two.
11. Once melted, remove from oven and add sauerkraut to one side of each sandwich followed by your cooked tempeh slices/cubes.
12. Drizzle Thousand Island dressing over the other piece(s) of bread before closing your sandwiches.

And voila – you now have yourself a delicious Vegan Tempeh Reuben Sandwich that is sure to satisfy any craving for this classic sandwich!
