7. Add one chopped onion, two minced garlic cloves, half teaspoon chili powder, half teaspoon cumin powder into the skillet.

8.Cook until onions become translucent then add one can drained black beans into it .

9.Add salt & pepper as per taste

10.Take off from heat after cooking for 5-7 minutes

11.To make avocado salsa: Cut two ripe avocados into small cubes; add chopped tomatoes too if desired . Mix together lime juice , salt , pepper ,fresh cilantro leaves.

12. Once the sweet potatoes are done, slice them in half lengthwise.

13. Stuff each potato with a generous portion of the black bean mixture and top with the avocado salsa.

14. Garnish with more cilantro leaves or any other herb of your choice.
