Awase Miso

Awase means “mixed” in Japanese hence Awase Miso refers to mixed Miso paste which blends two different kinds of Misos together – red & white / yellow- providing an intermediate flavour between mild & strong tastes.Mostly preferred for preparing soups .

Hatchō Miso

Hatchōmugi (barley)mis ois produced by long-term fermentation without mixing any other ingredients besides water,salt & Soybean .It’s dark black colour ,deep savoury taste makes it ideal choice for baking recipes like breads where you want to add some salty flavour.

Shinshū Miso

Made in the Shinshu region of Japan, this miso is made using a combination of soybeans and rice or barley malt. It has a lighter color and sweeter flavor compared to red or darker misos. This type of miso is often used for making traditional Japanese pickles.
