Interview with Chef Sarah: Fish Bone Broth Recipe

Q: What inspired you to create this fish bone broth recipe?
A: I’ve always been interested in using all parts of an animal when cooking. Fish bones are often discarded but they contain a lot of nutrients that we miss out on. Plus, fish broth has been traditionally used in many cultures as a healing food.
Q: What are the health benefits of consuming fish bone broth?
A: Fish bone broth is rich in collagen which helps support skin, hair, and nail growth. It also contains essential amino acids like glycine and proline which have anti-inflammatory effects on the body. The minerals found in the bones also help support overall immune system function.
Q: Can you walk us through your recipe?
A: Sure! You’ll need 2-3 pounds of fish bones (any type will do), 1 onion chopped, 2 carrots chopped, 2 celery stalks chopped, 4 garlic cloves smashed, a bunch of parsley stems and any other herbs you like (I love thyme), salt to taste and filtered water to cover everything.
Place all ingredients in a large pot and bring to a boil over high heat. Reduce heat to low and let simmer for at least 8 hours (or up to 24 hours) until the liquid has reduced by half. Strain out solids with cheesecloth or fine mesh strainer before serving or storing.
Q: How do you suggest incorporating this into our diet?
A: Use it as a base for soups or stews instead of water or stock. Or drink it straight up with some added seasoning like lemon juice or hot sauce. It’s a great way to get more nutrients into your diet without having to eat big chunks of fish.
