Watermelon Rind Pickles: The Sweet and Tangy Treat You Didn’t Know You Needed

When you think of watermelons, the first thing that comes to mind is probably the juicy, sweet flesh tucked inside. But what about the tough, green rind that usually ends up in the trash? Believe it or not, those watermelon rinds can actually be transformed into a delicious and healthy treat: watermelon rind pickles.

These pickles have been around for centuries and were even a popular snack during World War II when food was scarce. Today, they’re making a comeback as people look for creative ways to use up all parts of their produce while reducing waste.

So how do you make these pickles? It’s surprisingly easy! Here’s what you’ll need:

– Watermelon rind (make sure it’s thoroughly washed)
– Vinegar
– Sugar
– Spices (optional)

First, cut off the outer green layer of the watermelon rind with a sharp knife. Then cut the remaining white part into bite-sized pieces or strips. Next, combine vinegar and sugar in a pot over medium heat until the sugar dissolves. Add any spices you like (cinnamon, cloves, and ginger are popular choices) and bring to a boil.

Once your brine is ready, add in your watermelon rind pieces and let them simmer for 10-15 minutes until they become translucent but still slightly crunchy. Transfer everything to jars and allow them to cool before storing them in your fridge – they should last for several weeks!

But why bother making these pickles when you could just buy regular ol’ cucumber ones from your local grocery store? For starters, watermelon rind pickles are lower in calories than traditional cucumber pickles since they’re made from mostly fiber-rich fruit instead of starchy vegetables. Plus, they have a unique sweet-and-tangy flavor that pairs well with everything from sandwiches to cheese boards.
