Greek Salad with Grilled Chicken (Serves 4)

Ingredients:
– 2 boneless chicken breasts
– Salt and pepper
– 1 head romaine lettuce
– 1 red onion
– 1 cucumber
– 2 tomatoes
– ½ cup pitted kalamata olives
– ¼ cup crumbled feta cheese

For the dressing:
– Juice of one lemon
– 3 tbsp extra-virgin olive oil
– Salt and pepper

Instructions:

1. Preheat grill or grill pan over medium-high heat.
2. Season chicken breasts with salt and pepper on both sides.
3. Grill chicken until cooked through (about six minutes per side).
4. Let chicken rest for five minutes before slicing into strips.
5. Cut lettuce into bite-size pieces.
6. Halve cucumber lengthwise then slice crosswise into half-moons.
7.Slice onion thinly then separate slices into rings.
8.Cut tomatoes into wedges then cut wedges in half crosswise..
9.In large bowl combine lettuce,cucumber,tomatoes,onion,and olives together.Pour dressing over salad mixture.Toss salad gently.Top with grilled sliced chicken.Finish off by sprinkling feta cheese over top.

2. Asian Cuisine

Asian cuisine is known for its aromatic spices and sauces, but many dishes can be high in fat and calories. Here’s a recipe for a low-fat Thai-style stir-fry:

Thai-Style Chicken Stir-Fry (Serves 4)

Ingredients:
– 1 lb boneless, skinless chicken breast
– Salt and pepper
– 2 tbsp cornstarch
– 2 tbsp soy sauce
– 1 tbsp rice vinegar
– 1 tsp honey
– ½ cup chicken broth
– 1 tsp sesame oil
-3 garlic cloves,minced.
-1/2 teaspoon grated ginger root.
-8 ounces snow peas,trimmed
-8 ounces sliced mushrooms
-Green onions,sliced thin

Instructions:

1. In a medium bowl, whisk together cornstarch, soy sauce,rice vinegar,honey,chicken broth,and sesame oil.Add minced garlic and grated ginger to the mixture.Set aside.
2.Cut chicken into bite-size pieces then season with salt&pepper on both sides.
3.In large nonstick skillet or wok set over high heat cook chicken until browned all over(about five minutes).
4.Remove cooked chicken from skillet or wok onto plate.Set aside.
5.To the same pan add in mushrooms and cook just until softened slightly (about two minutes)
6.Then add snow peas followed by green onions to pan.Sautee veggies stirring frequently for another minute.
7.Return the cooked chicken back to skillet/wok along with the prepared sauce.Toss everything together until coated well.Cook everything for another five minutes untill heated throughly.Serve hot with steamed rice.

3. Mexican Cuisine

Mexican cuisine is known for its bold flavors such as chili peppers,cilantro,lime juice,tomatoes,and avocados.Here’s a recipe that packs all of them in without packing on the fat:

Grilled Fish Tacos with Avocado Salsa (Serves 4)

Ingredients:
-1 lb white fish fillets (such as tilapia)
-Salt and pepper
-2 tbsp olive oil
-8 corn tortillas
For the salsa:
– 2 ripe avocados, diced
– 1/4 cup finely chopped red onion
-1 jalapeno pepper,seeded&chopped.
– Juice of one lime.
– Salt and black pepper to taste

Instructions:

1. Preheat grill or grill pan over medium-high heat.
2.Season fish fillets with salt and pepper on both sides.Brush them lightly with olive oil then set aside for later.
3.In large mixing bowl combine diced avocado,chopped red onion,chopped jalapeno,and fresh lime juice.Toss everything together until combined.Add salt&pepper according to taste.Set aside salsa for later use.
4.Grill each tortilla on your preheated grill or grilled pan until warm and charred(about a minute per side).Remove from heat and stack them up in a plate/warmer covered with clean kitchen towel to keep warm while cooking rest of tacos.
5.Place prepared fish onto the hot grill.Start grilling it untill cooked throughly on both sides(for about four minutes per side).
6.Remove cooked fish from the grill.Cut each piece into bite-size pieces using knife/fork.Assemble tacos by placing some cooked fish onto a warmed-up tortilla followed by spooning some avocado salsa over top.Do this step repeatedly untill all taco shells are filled.Top off with some cilantro leaves if desired.Serve immediately.
