While the sweet potatoes cook, heat up black beans seasoned with chili powder, cumin, salt & pepper on medium-low heat on stove top . Once the sweet potatoes are done cooking slice them open lengthwise , mash slightly with fork then spoon heated black beans over each potato half .
4. Spaghetti Squash Pad Thai
Spaghetti squash is an affordable alternative to traditional noodles, and it makes a great base for this vegan Pad Thai recipe. Cut the squash in half lengthwise and remove the seeds. Roast them face down on a baking sheet at 375°F for about 45 minutes or until fork-tender.
While the squash cooks, whisk together soy sauce, brown sugar, lime juice, and chili paste in a bowl. Sauté garlic and tofu in oil before adding shredded carrots & zucchini . Add cooked spaghetti squash strands into pan and toss together with sauce mixture
5. Veggie Stir Fry
