Kombucha is a fermented tea that has been gaining popularity among health enthusiasts. It is known for its probiotic content, which promotes good digestion and overall gut health. Making your own kombucha at home can be a fun and rewarding experience, as well as an affordable alternative to store-bought varieties.

One way to make kombucha at home is through continuous brewing. This method involves keeping a batch of kombucha going indefinitely by adding fresh tea and sugar to the existing culture. Here’s how to do it:

Ingredients:
– Kombucha SCOBY (symbiotic culture of bacteria and yeast)
– ½ cup of organic cane sugar
– 4 tea bags (black or green tea)
– 1 gallon of filtered water

Instructions:
1. Sterilize your brewing vessel (a glass jar or ceramic crock) with hot water.
2. Boil the filtered water in a pot.
3. Turn off the heat and add the sugar, stirring until it dissolves completely.
4. Add the tea bags to the hot water mixture and let it steep for about 10 minutes.
5. Remove the tea bags from the pot using clean tongs.
6. Let this mixture cool down completely before proceeding further.
7. Once cooled, add this sweetened brewed-tea mixture into your sterilized brewing vessel along with one cup of pre-made kombucha liquid called starter liquid(liquid from previous brew).
8.Add in your SCOBY into this vessel
9.Cover loosely with a cloth or paper towel secured with an elastic band; keep in warm spot away from direct sunlight where you can leave it undisturbed for several days – between 7-14 days depending on climate conditions/temperature preferences.

After seven days, taste-test your kombucha by taking out some liquid with a straw or spoon – if you like it sour enough then you can bottle up some of what’s left over after removing the SCOBY, and store it in the fridge for drinking.

To continue with continuous brewing, simply replace what you took out with fresh sweetened tea mixture. The SCOBY will continue to grow and produce more kombucha as long as you keep feeding it.
