To make homemade gluten-free granola bars, start by gathering all the necessary ingredients: rolled oats (certified gluten-free), nuts or seeds of your choice (such as almonds or sunflower seeds), dried fruits like cranberries or raisins, honey or maple syrup as a sweetener, nut butter for binding (try almond butter or peanut butter), vanilla extract for flavoring, and optional add-ins like chocolate chips or shredded coconut.

Begin by preheating your oven to 350°F (175°C) and lining an 8×8-inch baking dish with parchment paper. In a large mixing bowl, combine the rolled oats, nuts/seeds, dried fruits, and any additional add-ins you desire.

In a small saucepan over low heat, warm up the nut butter and honey/maple syrup until they become easy to mix together. Remove from heat once combined smoothly; adding vanilla extract afterward enhances the flavors further.

Next comes the crucial step of combining wet and dry ingredients. Pour the warm nut butter mixture into the large mixing bowl containing oats and other ingredients. Stir everything together until well-coated.

Transfer this mixture into the prepared baking dish lined with parchment paper while pressing down firmly to ensure even thickness throughout. Bake in the preheated oven for around 20-25 minutes, or until the edges turn golden brown.

After removing from the oven, allow the granola bars to cool completely before cutting them into desired shapes and sizes. This step is essential as it allows the bars to firm up and hold their shape.

Once cooled and cut, store your homemade gluten-free granola bars in an airtight container at room temperature for up to one week. You can also freeze them individually wrapped for longer shelf life.
