1. Baked Salmon with Lemon and Dill:
Ingredients:
– 4 salmon fillets
– 2 lemons (sliced)
– Fresh dill (chopped)
– Salt and pepper to taste

Instructions:
1. Preheat your oven to 375°F (190°C).
2. Place each salmon fillet on a piece of aluminum foil.
3. Season the fillets with salt and pepper.
4. Top each fillet with slices of lemon and sprinkle fresh dill over them.
5. Fold up the sides of the foil to create a packet for each fillet.
6. Bake in the preheated oven for about 15-20 minutes or until cooked through.
7. Serve hot with roasted vegetables or a side salad.

2. Zucchini Noodles with Meatballs:
Ingredients:
For meatballs –
– 1 pound ground beef
– 1 small onion (finely chopped)
– 2 garlic cloves (minced)
– 1 egg
– Salt and pepper to taste
For zucchini noodles –
– 4 medium-sized zucchinis
– Olive oil for cooking

Instructions:
1. In a mixing bowl, combine ground beef, chopped onion, minced garlic cloves, egg, salt, and pepper.
2. Form mixture into small meatballs using your hands.
3. Heat olive oil in a large skillet over medium heat.
4. Add meatballs to the skillet and cook until browned on all sides and cooked through.
5. While the meatballs are cooking, use a spiralizer or vegetable peeler to create zucchini noodles.
6. Once the meatballs are cooked, remove them from the skillet and set aside.
7. In the same skillet, add a little more olive oil if needed and sauté the zucchini noodles for 2-3 minutes until slightly softened but still crunchy.
8. Serve the zucchini noodles topped with meatballs and your favorite Paleo-friendly marinara sauce.

3. Cauliflower Fried Rice:
Ingredients:
– 1 medium-sized head of cauliflower
– 2 tablespoons coconut oil
– 1 small onion (finely chopped)
– 2 cloves garlic (minced)
– 1 cup mixed vegetables (carrots, peas, bell peppers)
– 2 eggs (beaten)
– Coconut aminos or tamari sauce to taste

Instructions:
1. Remove florets from cauliflower and pulse in a food processor until it resembles rice grains.
2. Heat coconut oil in a large skillet over medium heat.
3. Add chopped onion and minced garlic to the skillet and sauté until fragrant.
4. Add mixed vegetables to the skillet and cook for about 5 minutes until tender-crisp.
5. Push vegetables to one side of the skillet and pour beaten eggs onto the other side.
6. Scramble eggs until cooked through, then mix everything together in the skillet.
7. Stir in cauliflower rice and cook for another few minutes until heated through but still slightly crunchy.
8. Season with coconut aminos or tamari sauce according to your taste preferences.

4. Grilled Chicken with Avocado Salsa:
Ingredients:
For chicken –
– 4 boneless skinless chicken breasts
– Olive oil for brushing
– Salt and pepper to taste
For avocado salsa –
– 2 ripe avocados (diced)
– 1 tomato (diced)
– 1 small red onion (finely chopped)
– Fresh cilantro (chopped)
– Juice of 1 lime
– Salt and pepper to taste

Instructions:
1. Preheat your grill to medium-high heat.
2. Brush chicken breasts with olive oil and season with salt and pepper.
3. Grill the chicken for about 6 minutes per side or until cooked through.
4. While the chicken is grilling, prepare the avocado salsa by combining diced avocados, tomatoes, red onion, fresh cilantro, lime juice, salt, and pepper in a bowl.
5. Mix well until all ingredients are evenly combined.
6. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before serving.
7. Top each grilled chicken breast with a generous spoonful of avocado salsa.
