1. Prepare the milk: Kefir can be made with various types of milk such as cow’s milk, goat’s milk, or even non-dairy alternatives like coconut or almond milk. Pour one quart (or liter) of milk into a clean glass jar.

2. Add the kefir grains: Gently place 1-2 tablespoons of kefir grains into the jar with the milk.

3. Fermentation process: Cover the jar loosely with a lid or cheesecloth to allow air circulation while keeping out contaminants. Store it at room temperature away from direct sunlight for approximately 24-48 hours, depending on how tangy you prefer your kefir.

4. Strain and separate: After fermentation, strain out the kefir grains using a plastic sieve or strainer over another clean container. The liquid that passes through is your homemade kefir while the grains can be reused for subsequent batches.

5. Flavoring (optional): At this point, you can enjoy plain kefir as it is or add flavorings like fruits, honey, vanilla extract, or spices to enhance its taste.

6.Store and refrigerate: Transfer your freshly made flavored or unflavored kefir into glass bottles with tight-fitting lids and store them in the refrigerator for an additional 12-24 hours. This secondary fermentation process will help develop the flavors and increase the thickness of kefir.

7. Enjoy your homemade kefir: Once chilled, your kefir is ready to be enjoyed as a refreshing beverage or used in various recipes like smoothies, salad dressings, or baked goods.

It’s important to note that kefir grains are living organisms that require care and attention. To keep them active and healthy, rinse them gently with non-chlorinated water after each use and store them in fresh milk if you’re taking a break from making kefir.
