Laura: It’s all about getting creative with versatile, cost-effective ingredients like beans, lentils, rice, pasta, eggs, and seasonal produce. For example, beans can be used in soups, salads, tacos, or even blended into dips like hummus. By mixing up flavors and textures and experimenting with different spices and herbs, you can create diverse dishes without spending a fortune.

Laura: Absolutely! One of my favorites is veggie stir-fry with brown rice. It’s simple yet satisfying – just sauté whatever vegetables are on sale with soy sauce and garlic, then serve over cooked brown rice. Another go-to is homemade vegetable soup using leftover veggies from the fridge or freezer. And let’s not forget about breakfast – overnight oats made with oats, milk (or yogurt), fruit, nuts/seeds is both economical and nourishing.

Laura: My biggest piece of advice would be not to get discouraged if things don’t go perfectly at first. And remember – cooking at home doesn’t have to be complicated or expensive; it’s all about finding joy in preparing wholesome meals for yourself and loved ones!
