When it comes to incorporating more vegetables into your diet, Brussels sprouts are a fantastic option. These mini cabbages are not only delicious but also packed with essential nutrients like fiber, vitamins C and K, and antioxidants. One delicious way to enjoy Brussels sprouts is by making balsamic glazed Brussels sprouts. This recipe adds a sweet and tangy flavor to the hearty vegetable, making it a perfect side dish for any meal.

To make balsamic glazed Brussels sprouts, you will need the following ingredients:
– 1 pound of Brussels sprouts
– 2 tablespoons of olive oil
– Salt and pepper to taste
– 2 tablespoons of balsamic vinegar
– 1 tablespoon of honey or maple syrup (for sweetness)
– Optional toppings: grated Parmesan cheese, chopped walnuts, dried cranberries

Start by preheating your oven to 400°F (200°C). Wash the Brussels sprouts thoroughly and trim off the tough ends. Cut them in half lengthwise and place them on a baking sheet lined with parchment paper.

Drizzle the olive oil over the Brussels sprouts and season with salt and pepper. Toss everything together until the sprouts are evenly coated in oil and seasoning. Spread them out in a single layer on the baking sheet.

Roast the Brussels sprouts in the preheated oven for about 20-25 minutes or until they are tender and starting to caramelize around the edges.

While the Brussels sprouts are roasting, prepare the balsamic glaze. In a small saucepan, combine the balsamic vinegar and honey or maple syrup. Bring it to a simmer over medium heat, then reduce heat slightly and let it cook for another 5-7 minutes until it thickens slightly.

Once the Brussels sprouts are done roasting, drizzle the balsamic glaze over them while they’re still warm. Toss gently to coat each piece evenly.

You can enhance this dish by adding optional toppings like grated Parmesan cheese for extra richness or chopped walnuts and dried cranberries for added texture and sweetness.

Balsamic glazed Brussels sprouts make an excellent side dish for roasted chicken or grilled salmon. They can also be enjoyed on their own as a light vegetarian meal paired with quinoa or brown rice.
