Superfood Showdown: Quinoa, Lentils, and Chickpeas Lead the Pack in Nutrient-Packed Goodness

Quinoa is a versatile and nutrient-dense grain that has gained popularity in recent years for its health benefits. It is a complete protein, meaning it contains all nine essential amino acids that the body cannot produce on its own. Quinoa is also high in fiber, iron, magnesium, and manganese. To cook quinoa, rinse it under cold water to remove any bitterness caused by saponins on the outer layer. Then, combine one part quinoa with two parts water or broth in a saucepan and bring it to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes until the liquid is absorbed.

Lentils are a great source of plant-based protein, fiber, and various vitamins and minerals such as folate and iron. They come in different varieties like brown, green, red, or black lentils. Lentils do not require soaking like other legumes before cooking which makes them quick and easy to prepare. To cook lentils on the stovetop, simply rinse them under running water before adding them to boiling water or broth at a ratio of 1:3 (one part lentils to three parts liquid). Simmer for about 20-30 minutes until they are tender but still hold their shape.

Chickpeas are another nutritious legume rich in protein, fiber, vitamins like folate and minerals such as iron and phosphorus. They can be used in various dishes from salads to curries or even roasted as a crunchy snack. Canned chickpeas are convenient but may be higher in sodium compared to dried ones that you soak overnight before cooking with fresh water for about an hour until soft.

Tempeh is made from fermented soybeans pressed into firm blocks that are high in protein and probiotics beneficial for gut health. It has a nutty flavor with a chewy texture making it ideal for marinating or grilling after slicing into desired shapes like cubes or strips.

Edamame are young soybeans harvested before they fully mature which makes them sweeter than regular soybeans commonly found steamed either still inside their pods or shelled as snacks or added into stir-fries for extra plant-based protein.
