Winter is here, and what better way to stay warm than with a hot bowl of soup? If you are a fan of brussel sprouts, then you will love Creamy Garlic Parmesan Brussel Sprout Soup. This delicious soup is easy to make and packed with flavor.

To start, gather your ingredients: 1 pound fresh brussel sprouts (trimmed and halved), 2 tablespoons olive oil, 1 tablespoon minced garlic, salt and pepper to taste, 4 cups chicken or vegetable broth, ½ cup heavy cream or milk (optional), and ½ cup grated parmesan cheese.

Begin by heating the olive oil in a pot over medium heat. Add the minced garlic and sauté for about one minute until fragrant. Then add the halved brussel sprouts along with salt and pepper; stir well to combine all ingredients.

Pour in the chicken or vegetable broth; bring everything to a boil. Then reduce heat to low; cover the pot tightly with a lid. Let it simmer for about twenty minutes until the brussel sprouts are tender enough that they can easily be crushed using a fork.

Once cooked through remove from heat immediately. Using an immersion blender puree everything together into a smooth creamy consistency. You could also transfer small batches into your stand-alone blender if an immersion blender isn’t available but do not fill more than halfway full at any given time as hot liquids have been known to explode out of blenders under pressure causing serious burns.

Return your blended mixture back into your pot over low heat while stirring in heavy cream/milk (if desired) followed by parmesan cheese lastly before serving immediately
