Try This Flavorful Cilantro Lime Cauliflower Rice Recipe for a Healthy Meal Alternative

Cauliflower rice has become a popular alternative to traditional rice, and it’s easy to see why. It’s low in calories and carbohydrates, making it an excellent choice for those following a low-carb or keto diet. Plus, it’s incredibly versatile and can be used in a variety of recipes.

One of our favorite ways to enjoy cauliflower rice is with cilantro and lime. This recipe is packed with flavor and makes for the perfect side dish or base for a healthy bowl.

To make cilantro lime cauliflower “rice,” start by washing and drying one head of cauliflower. Cut off the leaves and stem, then chop the florets into small pieces using a food processor or grater. You want the pieces to be small enough that they resemble grains of rice.

Next, heat one tablespoon of olive oil in a large skillet over medium-high heat. Add the cauliflower rice to the skillet along with some salt and pepper to taste. Cook for about 5-7 minutes, stirring occasionally until the cauliflower is tender but not mushy.

Once your cauliflower is cooked through, remove it from the heat and add two tablespoons of fresh lime juice, two tablespoons of chopped cilantro, and one minced garlic clove. Mix everything together until well combined.

That’s it! Your cilantro lime cauliflower “rice” is ready to serve.

This dish pairs perfectly with grilled chicken or fish for a complete meal. You could also use it as a base for burrito bowls or salads.

If you’re looking for more ways to incorporate this delicious dish into your meals throughout the week, consider adding some extra protein like shrimp or tofu on top. You could also mix in other veggies like bell peppers or corn for added texture and flavor.
