7. In another mixing bowl whisk together all ingredients for dressing until smooth consistency achieved.
8. Take out chilled cooked quinoa from fridge add it to bowl containing mixed veggies now slowly pour dressing on top of it while gently mixing to ensure dressing is evenly distributed.
9. Lastly, garnish your salad with chopped cilantro and peanuts.
