Healthy Twist on Pineapple Upside Down Cake: Enjoy a Sweet Treat Without the Guilt!

Pineapple Upside Down Cake: A Healthy Twist

Looking for a sweet treat that won’t derail your healthy eating habits? Look no further than pineapple upside down cake! With a few simple ingredient swaps, this classic dessert can become a healthier option without sacrificing any of the delicious flavor.

First and foremost, let’s talk about the cake itself. Instead of using traditional all-purpose flour, try using whole-wheat flour or almond flour. Both options add extra fiber and nutrients to the cake while also keeping it gluten-free for those with dietary restrictions. Additionally, you can swap out some of the sugar in the recipe for natural sweeteners like honey or maple syrup.

Next up is the topping – arguably the best part of any pineapple upside down cake. Instead of canned pineapple rings packed in sugary syrup, opt for fresh pineapple slices. Not only will they give your cake a brighter flavor and texture, but they’re also lower in added sugars.

For an even healthier twist on the topping, consider adding other fruits like sliced strawberries or blueberries to give your cake an extra punch of antioxidants and vitamins.

Finally, let’s talk about butter – a key ingredient in most baked goods including pineapple upside down cake. While butter does provide flavor and moisture to cakes, it’s not always necessary in large quantities. Try swapping out some (or all) of the butter in your recipe with unsweetened applesauce or mashed bananas. This will cut down on saturated fat while still giving you that soft and moist texture you crave from a good slice of Pineapple Upside Down Cake.

Now that we’ve covered some healthy ingredient swaps for Pineapple Upside Down Cake let’s get into how to bake it:

Ingredients:
– 1 cup whole-wheat flour
– 1/2 cup almond flour
– 1/2 cup honey
– 3 eggs
– 1 tsp baking powder
– 1/4 tsp baking soda
– 1/2 cup unsweetened applesauce
– 1 tsp vanilla extract
– 1 fresh pineapple, peeled and sliced into rounds (save the juice)
– 1/2 cup blueberries or strawberries (optional)
– 3 tbsp unsalted butter

Directions:

1. Preheat your oven to 350 degrees Fahrenheit.

2. In a mixing bowl, combine whole-wheat flour, almond flour, baking powder and baking soda.

3. Add in honey, eggs, unsweetened applesauce and vanilla extract. Mix until well combined.

4. Grease a cake tin with some of the butter.

5. Arrange pineapple slices on top of the melted butter at the bottom of your cake tin. Add optional fruits such as blueberries or strawberries if using.

6. Pour cake batter over fruit layer evenly.

7. Bake for about 35 minutes or until an inserted toothpick comes out clean from center of cake.

8. Let cool for ten minutes before flipping over onto a serving plate so that pineapples are facing upwards!

With this recipe in hand you can enjoy delicious Pineapple Upside Down Cake without any guilt!
