In its simplest form, fermentation is a process where microorganisms such as bacteria, yeast, or fungi break down carbohydrates into alcohol or organic acids. This process not only helps to preserve food but also enhances its flavor and nutritional value.

One of the most popular fermented foods is yogurt. Made by fermenting milk with live cultures of bacteria (usually Lactobacillus bulgaricus and Streptococcus thermophilus), yogurt is rich in probiotics which are beneficial for maintaining a healthy gut flora. Probiotics help to balance the good and bad bacteria in our digestive system, leading to improved digestion and overall well-being.
