Water kefir, also known as tibicos or sugar kefir grains, is a fermented drink made from water, sugar, and kefir grains. It has gained popularity in recent years due to its probiotic properties and potential health benefits. This fizzy beverage is a great alternative to sugary sodas and can be easily made at home.

To make water kefir, you will need water kefir grains, which are not actual grains but rather a combination of bacteria and yeast that form into small gelatinous structures. These grains feed on the sugar in the water and produce lactic acid, carbon dioxide, and small amounts of alcohol through fermentation.

The process of making water kefir is quite simple. Start by dissolving sugar in filtered water until it’s completely dissolved. Add the water kefir grains to this mixture along with any additional flavorings like dried fruit or ginger slices. Cover the container with a cloth or paper towel secured with a rubber band and let it ferment for 24-48 hours at room temperature.

After the fermentation period, strain out the kefir grains using a plastic strainer (avoid using metal utensils as they can damage the grains) and transfer the liquid to bottles for storage. You can enjoy your homemade water kefir as is or carbonate it further by sealing the bottles tightly and letting them sit at room temperature for another day before refrigerating.

One of the main reasons why people consume water kefir is for its probiotic content. Probiotics are beneficial bacteria that promote gut health by maintaining a balance between good and bad bacteria in the digestive system. Regular consumption of probiotics may help improve digestion, boost immunity, and even enhance mental health.

In addition to being rich in probiotics, water kefir is also low in calories compared to traditional sugary drinks like soda. By fermenting away most of the added sugars during fermentation, you’re left with a tangy beverage that satisfies your craving for something sweet without all the empty calories.

Some enthusiasts claim that drinking water kefir can help improve skin health due to its probiotic content promoting overall gut health which reflects on our skin appearance too. However more research needs to be done on this topic.
